THE COOKINIG KID - by Tswelopele Molope

Welcome to THE COOKING KID where every week I will have something that you can bake or cook. Today we’ll be making scrumptious barbecue chicken.
 
INGREDIENTS:
  • 800g (1¾ lb) chicken thighs or drumsticks
  • 2 cloves garlic, crushed or chopped
  • 2 tbsp (tablespoon) sugar
  • ½ tbsp light soy sauce
  • 1 tbsp clear honey
  • 2 tbsp tomato sauce
  • ½ tsp tomato paste
  • 1 tbsp brown sauce or Worcestershire sauce
  • Salt and pepper
1. Mix together all the ingredients (apart from the chicken) in a mixing bowl to make the marinade.

2. Cut through the skin of the chicken pieces in diagonal lines with a sharp knife.

3. Put the chicken pieces into the bowl of marinade and mix until all the chicken is coated. Cover with clean wrap or put it in a stiff container. Leave it in the fridge for 30 mins or more.                        

4. When you are ready to cook the chicken, preheat the oven to 200oC (400OF/Gas mark 6).

5. Put the chicken onto a greased baking tray and bake in the oven for 40 mins or until cooked through and golden brown. You can check if the chicken is cooked through by using a skewer or a sharp knife to check if the meat is not pink in the middle.
